LONTONG BALAP SPECIAL SURABAYA (INDONESIA)
Ingredients

  1. Sprouts (bean sprouts) ingredients ::
  2. 300 gr bean sprouts
  3. 5 Garlic cloves
  4. 4 red onion cloves
  5. to taste leeks
  6. to taste Celery leaves
  7. 1 Liter beef broth (plain water can also)
  8. 2 tbsp Oil for sauteing
  9. 1 tsp Powdered broth
  10. 1/4 teaspoon of ground pepper
  11. Adequate Salt & Sugar

Supplementary material :

  1. Rice cake
  2. Fried tofu
  3. Lento Kacang tolo
  4. Fried onions
  5. Soy sauce
  6. Lotto bean ingredients:
  7. 200 gr Tolo beans boiled (3/4 mashed, 1/4 left intact)
  8. 5 Fine Garlic Cloves
  9. 2 cm fine Kencur
  10. Egg whites
  11. 2 pieces of Orange Leaf thinly sliced
  12. 3 cayenne pepper (optional)
  13. Adequate Salt & sugar

Sambal petis material :

  1. 3 tbsp Shrimp Petis
  2. 15 Chili Raw (optional)
  3. 5 Garlic Cloves
  4. 5 tablespoons cooking oil
  5. 1-2 tbsp Sweet soy sauce
  6. enough water
  7. to taste Salt & sugar

Step
Make a sprout sauce (bean sprouts):
Blend the garlic & red onion ... smooth seasoning sauce ... put the broth ... give salt, pepper, sugar & powder broth, cook until boiling, add bean sprouts, chives & celery mix well then immediately turn off the heat ... let the bean sprouts cook yourself with the hot sauce.
Prepare the dish with complementary ingredients and flush with gravy, sprinkle fried onions and sweet soy sauce, complete with sambal petis and scallop satay.
Mix all ingredients and mix well, make the spheres in a way until they are dense ... then fry until browned.
Make sambal petis:
Blend the cayenne & garlic with a little oil ... stir fry and give enough salt, sugar, soy sauce & water ... stir evenly so that the paste does not clot, cook until it bursts. Viscosity according to taste.
