SATE LILIT
Material :

  1. 2 rubbery fish weighing 550 grams
  2. 50 grams of steamed grated coconut
  3. 3 orange leaves, finely sliced
  4. 12 sticks of lemongrass, take the white, cut the ends
  5. 3 tablespoons of cooking oil (1 tbsp for sauteed seasoning, 2 tbsp for topping with satay)
  6. Softened seasoning :
  7. 5 red onion cloves
  8. 3 garlic cloves
  9. 5 curly chili fruits
  10. 3 cm of turmeric
  11. 1 tablespoon of brown sugar
  12. 1 tablespoon of salt
  13. 1/2 spoonful of powdered broth

How to make :
Clean fish, fillets. Grind the fish meat smooth
Prepare fine spices, steamed grated coconut, slices of citrus leaves and citronella stems. Oh yeah, in this recipe, the grated coconut that I use is steamed for a while, then 10 minutes, this is done so that the satay wrap is more durable and not fast enough.
Heat 1 tablespoon of cooking oil, add the smooth seasoning. Stir the fine spices. Saute the spices until they're cooked or fragrant. Lift and set aside.
Mix the fish meat with grated coconut, sliced ​​orange leaves and finely seasoned spices. Stir until everything is evenly mixed.
Take 1 tablespoon of the mixture, flatten it in your hand, roll it or wrap the satay mixture into the lemongrass stem. Do it until the dough runs out.
Heat 1 tablespoon of cooking oil on Teflon. Add the satay lilit, bake until the satay wrap is cooked. In order not to burn and can cook evenly, the satay wrap should often be flipped and smeared with cooking oil.
Lift the wrapped satay and arrange it on the plate. Serve with typical Balinese sambal.
